Shell in the Mud

Commonly known as Tua Tow or Mud Mussels are not easily available these days.

Once upon a time, a hot favourite dish at Zi Char stalls.

How to get rid of the sand and dirt from these mussels?

Soak these mussels in a bowl of water together with some flour just before cooking. As the mussels breathe they filter water. When the fresh water is filtered, the mussels pushes salt water and sand out of their shells. Repeat a few rounds until water is clear.

Take a look a the inner portion of the cleanse mussel.

The simplest method of cooking mussels is to quick stir fry with Sambal Chilli and serve immediately.
