What shall I cook with these fresh baby lobsters?
Luckily my friend suggested how about Lobster Porridge.
What a good idea.
Maybe I should give a savoury flavour and a distinct sharp taste to enhance the sweetness of these fresh lobsters.

Poach the lobster claws until cooked.
Remove and place in water bath.
Once cooled remove the lobster flesh from these claws and refrigerate the cooked meat.
Melt butter in a saucepan and add diced sweet onion, chopped celery and tomatoes and cook to soften.
Pour in the home prepared chicken broth stirring well until well blended.
Add the cooked lobster shells and place into the stock.
Upon boiling add some white cooking wine.
Bring to a boil and simmer for about 30 mins
Sieve the soup base.
In a new pot, add the soaked rice and cook until the rice expand.
Now add the soup base and cooked lobster tails and bring to a boil.
Taste and add seasoning until the porridge reached your desired flavour.
Served with chopped spring onions and fried shallots.
