I believe not many are aware that the ingredient used for making Worcestershire sauce is none than the Assam (Tamarind). šŸ˜„

These fruits are long, brown and contain several hard and flat seeds surrounded by a juicy pulp.

Matured when the flesh is coloured brown or reddish brown.

Well cultivated for its sweet-sourish fruit pulp used locally as “Assam”.

The fruit is harvested by pulling the pod from its stalk.

Ikan Masak Pedas is also a dish that requires the Tamarind juice.

One of my favorite dish is Prawn cooked in Assam sauce.
