Durian Chempedak taste like Chempedak with juicy, sweet and fragrant pulp.
Similarity in look to normal Chempedak except Durian Chempedak has spiky skin.
1/2 cup self raising flour
1 tablespoon rice flour
1/4 cup cornflour
1/2 teaspoon baking powder
Pinch of salt
1 tablespoon cooking oil to be added to batter
90ml cold ice water
Remove seeds from each pulp. Set aside.
Mix all the different type of flour together in a mixing bowl.
Slowly pour in the ice cold water and a pinch of salt and whisk to a smooth consistency.
The batter should not be too thick nor runny.
Coat each fruit with the batter and leave it on for a one or two minutes before deep frying.
Heat wok until oil is hot.
Deep fry until golden brown.
Place the fritters on paper hand towel to absorb excess oil.
