This is home prepared fermented red glutinous rice wine sauce is ready to cook.
What impressed me most is the generous amount of Brandy XO added to this sauce.
What does it have to be Red Yeast Wine Chicken (Hong Zao Ji)?
How about my version of Red Yeast Wine Pork Shank. 😄
I large Pork Shank divided into 2 parts
3 tbsp Red Yeast Wine Paste
2 tbsp Hua Tiao Chiew
8 cloves garlic
3 pieces Star Anise
6 pieces sliced ginger
Bunch of lengthwise spring onion stalks
Blanch the pork shank in boiling water.
Marinate the pork shank with red yeast wine paste for an hour.
In a wok add cooking oil and sauteed the garlic cloves and sliced ginger.
Add the marinated pork shank and lightly seared.
Add dark and light superior soy sauce, rice wine, gula melaka, spring onion stalks and water and bring to a boil.
Transfer to a slow cooker and cook your desired tenderness and the sauce thickened.
Served with piping hot rice.
