Stir Fried Bitter Gourd with Salted Egg Yolk

Surprisingly Bitter Gourd can help to reduce blood sugar.

This vegetable is versatile and delicious and low in calories.

Supposingly claim to be one of the healthiest vegetables in the the food kingdom.

You can remove the bitterness from the Bitter Gourd with some salt.

Halved the Bitter Gourd lengthwise and use a metal spoon to remove the seeds and slice thinly.

Place sliced Bitter Gourd in a bowl with some salt water and leave it to soak for five minutes. Rinse and set aside.

How do you pick Bitter Gourd?

Generally, the darker green is more bitter than the lighter green.

I have chosen the ready salted yolk without the whites.

Just smashed the raw salted egg yolk coarsely instead of those cooked egg yolk. In fact the taste is much better.

Heat wok with some cooking oil.

Add minced garlic and fry the Bitter Gourd until semi soft. Season with superior light soy sauce and glaze with some cooking wine.

Dish out into a plate and set aside.

Now add the four mashed salted egg yolk and stir fry until foam forms.

Add the stir fried Bitter Gourd slices and stir for another minutes.

Season with some salt.

Dish into a serving plate and serve immediately
