In a saucepan, add brown sugar, superior dark soy sauce, mirin and sesame oil and simmer over low fire until sugar dissolved.
Add minced garlic, little cooking oil and grounded black pepper and mixed well.
Rinse the short ribs in fresh tap water to remove any bone fragments.
Add the ribs to the marinade and mix well.
Refrigerate for at least three hours before cooking.
Grilled the ribs until both sides are cooked.
Served with rice and kimchi and lettuce leaves.
