These torpedo shaped slender body Saltwater Smelt is a Japanese delicacy.

Best to deep fry whole and served with the intact roe.

Simple to cook, served as a good Appetizer or as a dish.

Coat with cornflour.

Deep into beaten egg.

Lastly coat with breadcrumbs.

Deep fry until both sides of the Smelt Fish until its nicely browned.

Drain the excess oil on kitchen paperhand towel and served immediately.

Just look at the overloaded fish roe. 😋
