Beetroot Soup

Health-Food Titan – Beetroot Soup.

Low in fat, full of vitamins and minerals and packed with powerful antioxidants.

Simple to prepare. This version without adding cream.

This root vegetable is an excellent source of dietary fibre.

Cut the beetroot into small pieces. Same for red carrots and celery.

Heat up unsalted butter in a saucepan, add minced garlic and chopped sweet onions and sautee for about two to three minutes.

Add the beetroot pieces, diced red carrots and celery and mixed well.

When the vegetables has softened, add a cup of water or more depending on the quantity used, cover with lid and cook for another ten minutes.

I used home prepared chicken broth instead of water.

Season with salt and pepper and a dash of white wine for a more flavourful taste.

Ensure the beetroot and other ingredients are properly cooked before turning off the heat, cool before blending.

Blend into a soft paste. If the paste is too thick, add more broth and season accordingly.

Its best to serve this soup warm.
