This fish flesh is smooth and fine.
Cleaned and gutted the Sillago.
To begin, pat dry the fish.
Seasoned these Silver Banded Whiting with salt and pepper.
Lightly coat with plain flour and set aside.
Heat cooking oil in a wok and when bubbled start to form and the oil is hot, add the coated fish to deep fry until golden brown.
Remove from heat and transfer to a piece of kitchen paper towel to drain off excess oil.
Best to serve hot and enjoy the crispiness of each fish.
When this fish is deep fried well, this dish is absolutely delicious.
There is only one main bone in the centre of the fish.
