Peranakan Pong Tauhu Soup aka Meatball Tofu Soup.
Juicy meatballs combining minced pork and prawns served in prawn infused soup. 😋
The soup base for this recipe is the prawn broth.
Deshelled the prawns, set aside the shells. Fry the prawn shells in a wok, add water and bring to a rolling boil and simmer for twenty minutes. Strain stock and discard the shells.
In large bowl, add the minced prawn and minced pork, together with the silken egg tofu and minced garlic. Season with pinch of salt, sugar, grounded white pepper and superior light soy sauce. Add a beaten egg and mash well.
Form the mixture into balls.
Long cabbage sweeten the taste of the soup.
Bring the stock to boil and cook the tofu balls keeping the heat low.
Add the cabbage to cook.
Taste the soup and adjust the seasoning accordingly.
Serve hot.
