Crab Meat Fried Rice with Roe

These are the two female crabs with abundance of roe.

Female crabs are rounded with shorter abdominal flap.

Wash and clean the crabs.

Remove the gills and sac etc.

Carefully remove the crab roe into a plate and set aside.

Its best to store the raw roe in the refrigerator immediately for freshness.

Steamed crab in the steamer until fully cooked.

Set aside to cool, remove the crab meat from all parts of the crab.

When the rice is almost ready, lightly steamed the crab roe until cooked but not hardened.

Incorporate the steamed roe and mix well with the remaining fried rice ingredients and serve immediately.

Garnished with chopped scallions.
